New Year's Resolutions 2014


Wow, 2013 is already coming to a close. Time is just going faster and faster, does anyone know where I can find the pause button? Well, it's time to think of those New Year's resolutions! I didn't used to be a New Year's resolution person, but making goals to improve yourself is great no matter what time of year so I've decided to make a few this year. 
 
1. No dieting
I don't believe in dieting. Rather than dieting or trying to lose weight, I resolve to make healthy choices. This year I made an effort at living a more healthy lifestyle, but I want to take it to the next level. I'm planning on exercising more consistently, cooking more, and eating cleaner healthy well balanced meals.

2. Relaaaax
With work, school, and motherhood things can get busy and stressful. This year I want to work on making time to relax. It's okay to take some time to just do something for me. I want to try yoga, and maybe have a spa day. Read more, take walks, and

3. Get it together...
I tend to have so much going on that nothing is organized. Well, this year I want to make time to get things in order. This is probably going to take a lot of work, but I'll do my best!

4. Stop neglecting you!
I know, I have been so bad about blogging. I always think of great things to write, and then I just run out of time. Well, working on #3 should help with this one. I have some big plans for 2014, so stay tuned!

Steak and Bleu Cheese Bruschetta






Upon my first bite of Steak and Bleu Cheese Bruschetta my eyes popped open big and wide. And then, with my mouth very full, I exclaimed, "Wow!"

I'm convinced the "wow factor" is that each slice of baguette is rubbed with a raw garlic clove. I will forever be grateful to noblepig.com for sharing that trick. Amazing.

This recipe is intended to be an appetizer. It's very festive with the red and green for holiday get-togethers.  

My family, however, eats Steak and Bleu Cheese Bruschetta as a meal. It's our glorious finale with the leftovers we have after a Traeger smoked brisket.  

It's certainly the season for appetizers, so be sure to drop by Eating with Angie for more yummy ideas like my favorite artichoke dip and bacon-wrapped chestnuts


Ingredients

  • 1-2 Sourdough baguettes, sliced at an angle for more surface area. 
  • extra-virgin olive oil
  • 2 garlic cloves
  • 1 Tablespoon butter
  • 1 pound leftover steak, cut into very small pieces (I love using leftover smoked brisket)
  • 1 cup cherry or grape tomatoes, halved
  • 1/4 cup chopped fresh chives
  • 1/4 cup chopped fresh basil
  • avocados, diced
  • 1 Tbsp lime juice
  • 1/2 teaspoon coarsely ground black pepper
  • Blue cheese dressing (I use Litehouse Original Bleu Cheese)

Directions

Step 1: Preheat oven to 400°F

Step 2: Lightly brush each slice of baguette with olive oil and place slices on a large cookie sheet. Bake in oven for 5 minutes to lightly "toast." Remove from oven and set aside to cool. 

Step 3: Rub cloves of garlic over top side of each baguette slice.

Step 4: Melt butter over medium heat in a large skillet. Add steak pieces and heat for up to 5 minutes to make sure steak is completely warmed. Set aside to cool for a few minutes. 

Step 5: In a medium-sized bowl, toss together tomatoes, chives, basil, avocado and lime juice. Toss in steak and lightly season with coarsely ground black pepper.

Step 6: Lightly spread (really, just a little will do it) bleu cheese dressing on each baguette slice. Add one heaping spoon fool of the steak mixture to the top of each slice. Serve and enjoy!

Christmas Party Fashion

The Man's company Christmas party was Saturday. I always look forward to it because it is the one day of the year where I get to dress up extra fancy.



This year I chose to go with this sexy little number: The Erin Dress from Pinup Girl Clothing. I was a little nervous about going with a wiggle dress, but I LOVE the way it fits.

Here is a photo after I finally was done getting ready. We were only an hour and a half late, haha! Okay, I'm always late, but I have to say that we had a bit of a sitter dilemma, so we were already running late on top of my regular lateness!






I got my makeup done by my girl at Sephora. The photo below doesn't bring it justice, she did an amazing job! I'm awful at doing eye shadow, but I think I may have to buy the Urban Decay Naked 3 palette that she used! For the lip, I used one of my favorite shades of red by Nars, Jungle Red.  I curled my hair and put in this gorgeous vintage style rhinestone hairpiece from Pinup Girl Clothing.







Here is a photo of me and The Man. Doesn't he just look dashing?! We had a fabulous time mingling with friends and dancing the night away!

Princess Cakes!

I have been so busy with school and trying to be being super mom that I haven't had time for my hobbies like writing here and cakes! I had Thanksgiving week off from work, and was so excited that I was asked to make two cakes! I need to get a photo of the other cake, but here is the Cinderella cake I made!
I have a major princess/ Disney obsession, so this one was extra fun for me! I was so pleased with how she turned out! What do you think?

Our Elf on the Shelf is back!

One of my daughter's favorite holiday traditions is our Elf on the Shelf. His name is Alfie and The Princess looks forward to his return every year! He got back on the 1st and she has had a blast searching for him in the morning since he's come back. She's already sent a note to Santa, and a necklace to repair in Santa's workshop.  She's definitely a believer!

Fun on the Ice

The Princess has been taking ice skating lessons. Last weekend I took a break from my school work and we spent some time on the ice. She loved showing off what she's been learning. She can definitely teach me a thing or two, starting with keeping my balance, haha!

Baked Ziti with Zip


Excuse me while a wipe a little drool off my chin. 
That's what this picture of Spicy Ziti and Spinach does to me!
Spicy Ziti and Spinach has been a favorite recipe of mine for a very long time. It's perfect when the nights are dark and chilly, and you want to indulge in a flavorful, heat-you-to-your-core meal.  
Bring out that food processor to make this meal a cinch to put together. The onions, the garlic and the spinach all get a turn.

Ingredients List
Serves 6-8
  • Olive oil
  • 3 cups dry pasta (fusilli or penne is best)
Sauce
  • 3/4 lb hot, ground Italian sausage
  • 1 medium onion, finely chopped
  • 3 large garlic cloves, minced
  • 1 (28 oz) can crushed tomatoes
  • Salt and pepper
  • 1/3 cup basil pesto sauce (I like Costco's Kirkland pesto best)
  • 10 oz fresh baby spinach, finely chopped
  • 1 cup shredded Parmesan
  • 6 oz of mozzarella cheese, cubed
  • Crushed red pepper (optional)
Directions
1. Heat a big pot of water to boiling and begin to cook pasta 2 minutes less than package directions. Drain and return pasta to the empty pot.

2. Preheat oven to 350°F and lightly oil 9×13 baking dish.


3. Over medium-high heat, brown sausage, onion and garlic in a large, deep skillet. Cook for 10 minutes or until sausage is cooked through.
4. Add tomatoes and juices to the meat mixture. Reduce heat and simmer for 5-10 minutes. 
5. Stir in the pesto and season with salt and pepper to taste.  Turn off the heat.

Ziti with mozzarella cubes and ready for the oven.
6. Gently pour the tomato-meat sauce over pasta in the pasta pot. Add the Parmesan and chopped spinach. Turn pasta with a big spoon until ingredients are evenly distributed.
7. Pour pasta mixture into the 9×13 baking dish. Press mozzarella cubes evenly throughout the pasta.
8. Bake, uncovered, for 30 minutes or until bubbly throughout.
Serve warm and with a little crushed red pepper if you really like it spicy.

My Twinn Doll
 

The Princess finally got a My Twinn Doll! What do you think, does it look like her? She absolutely loves it and has been playing with it non-stop since she opened the package.

She is pretty obsessed with dolls these days and has been asking for one of these for a long time. She is also asking Santa for an American Girl doll for Christmas.

"I told my kids I ate all their Halloween Candy"
 
So apparently I've been living under a rock because I just learned of Jimmy Kimmel's annual Halloween prank on children. He asks parent's to tell their children that they ate all of their candy and then video the children's reactions.

Here are the ones that Jimmy Kimmel selected as the "best":

I'm sure some will disagree with me on this, but I think it's awful. I don't see the humor in devastating your child for entertainment. Some of the reactions are a bit comical like the little boy who gives his dad a thumbs up, but most of them are just sad. The poor little girl at 2:30 just breaks my heart. How confusing for the poor children when they realize that their parents are just doing this to them for a laugh.
