Rainbow Around The Sun


I absolutely love rainbows. You know that song from The Sound of Music, Favorite Things. Well, rainbows are at the top of my list of favorite things, haha! Really though, there is something about seeing a rainbow that just brightens my day. It's a reminder that after every storm there is something beautiful.

Yesterday I saw a rainbow around the sun, or halo. It was so beautiful that I had to share. Have you seen one of these?

(Not So) Wordless Wednesday #51- It's a Small World

Disney Small World Dolls


I have been in love with the Disney Animators' Collection "It's a Small World" dolls since they were released last year! I finally went for it and bought 6 of the 7 originals: Holland, Hawaii, Japan, India, Kenya, and France. I still need England, but it's impossible to find! They recently released China and Mexico, and I can't wait to add those to my collection as well! I think they are just adorable, and I love that they all sing in their language as well as English.

(Not So) Wordless Wednesday #50- Kitten Love

We adopted a kitten! The story is all kinds of awesome... A couple days before our vacation to Reno, the man decided to take the Princess to look at kittens at Petco. She has wanted one forever. He said, well if you had $100 you could adopt one. Well, she got home and went straight to her piggy bank. A couple hours later, we were off to adopt a kitten! 

The man learned 3 valuable lessons:

1. Don't take a little girl to see the kittens at Petco (unless you're planning to adopt one). 
2. Don't tell the little girl that she can get a kitten if she can come up with the $100 (unless you really want a kitten).
3. Piggy banks hold a lot more money than you'd think.... On our way to Petco. She's crossing her fingers that he's still 
there! 
She named him Fiyero after the male lead in Wicked. Here are some of my favorite photos from my Instagram:




 
Isn't he the cutest!? They have bonded so sweetly! He just loves to snuggle up with her.

Angel Cupcakes with Lemonade Cream Cheese Frosting



Spring! Sun!! Lemonade!!!

We had one of those "teaser" days in Oregon last week when the sun warms us up just enough that we think the rainy, grey days are gone.  Sure enough, out came the kids with the lemonade stands.  So cute. Hope they got it all back in the garage before the downpour!

But even if the sun isn't shining, you can bring that Spring zip into your dessert with Angel Cupcakes with Lemonade Cream Cheese Frosting.  These would also make a darling Easter dessert with just a little food coloring magic. Imagine them frosted in light pink, Robin's egg blue and daffodil yellow.

Angel Cupcakes with Lemonade Cream Cheese Frosting is a fabulous recipe developed by Anne Byrn the "Cake Doctor."  She has the BEST recipes.  Angel Cupcakes with Lemonade Cream Cheese Frosting are featured in Cupcakes!: From the Cake Mix Doctor. If you don't have it, you should.

Ingredients for Angel Food Cupcakes
  • 24 paper cupcake liners
  • 1 package angel food cake mix (I used Better Crocker)
  • 3/4 cup water
  • 1/2 cup frozen pink lemonade concentrate, thawed
Ingredients for Lemon Cream Cheese Frosting
  • 8oz cream cheese, softened
  • 8 Tbsp unsalted butter, softened
  • 3 cups powdered sugar
  • 3 Tbsp pink lemonade concentrate, thawed
  • Zest of one lemon
Method for Angel Food Cupcakes
Step 1: Preheat oven to 350 F.

Step 2: Line two standard cupcake pans with the paper liners.

Step 3: In a large mixing bowl, pour in angel food cake mix, then water, then lemonade concentrate.
Mix a little by hand first. That mix will explode on you! Then mix on low for one minute. Stop the mixer, scrape down the sides and mix for 2 minutes more.

Step 4: Use a big serving spoon and another smaller spoon to scoop and scrape batter evenly into the cupcake pans. The batter is super sticky...almost like marshmallow cream.

Step 5: Bake cupcakes for 20-22 minutes. They should be lightly golden and if you press your finger in the middle, the cupcake will spring back up.

Step 6: Allow the cupcakes to cool in the pan for 5 minutes on a rack. Then remove them from the pan and cool for another 20 minutes before frosting.

Step 7: Store the frosted cupcakes in the refrigerator to keep them moist and creamy.

Method for Lemon Cream Cheese Frosting
Step 1: In a large mixing bowl, blend butter and cream cheese on low speed.

Step 2: Slowly add and blend in powdered sugar, lemonade concentrate and lemon zest. All ingredients should be thoroughly combined and frosting thick but spreadable.  If it's too thick, add a little more lemonade concentrate. If it's a little too runny, add more powdered sugar.

How to prank a tech geek...

I have always enjoyed pranking people a little too much, so naturally I LOVE April Fool's Day. I don't really get extravagant with it... I like to stick to small pranks like fake bugs in random places and pretend pregnancies (LOL)....

This year I cooked up the most awesome prank yet! My fiance is a major tech geek. So, I uploaded a photo of an error screen to his computer as the screensaver and unplugged his mouse. I waited till 11:59 PM to tell him it was a joke. <Insert evil laugh>

(Not So) Wordless Wednesday #48- Baby Sister's Wedding

Baby Sister's Wedding!
As you may recall from last week, I headed to Reno for Spring Break. My baby sister got married on Sunday!

It was such a fun week spending time with family and preparing. The wedding was wonderful! I was a bridesmaid and the Princess was a flower girl.

I'm so happy for my sister and her new husband. They are just so perfect for each other. Their love is just so sweet.

(Not So) Wordless Wednesday #46: Birthday Fun

Birthday Fun
My birthday was on the 7th, and I had such a wonderful day!  The lovely Cherry Dollface made a stop in Portland with her West Coast Pinup Tour. I did a mother/ daughter pin up shoot with The Princess, it was a blast!

Cherry Dollface did our hair, and Nikki Napalm did our makeup. They were both so sweet!

Gunslinger Photography did the photo shoot. I can't wait to see the photos! It was so fun! The Princess LOVED it. She has decided to be a model now, haha! I have to admit, she's a natural...


We went out to dinner, then had some ice cream cake from Baskin Robbins. Yum! Then I got to open my  presents! I collect Disney Limited Edition dolls, and I've been wanting these ones for quite a while! So gorgeous!


It was such a perfect birthday. Of course The Princess and I took a bunch of silly selfies. I loved being all dolled up!

Angie's Turkey Taco Soup


The chilly, wet weather has hit in Oregon. That means it's time to warm up with Angie's Turkey Taco Soup.
Most taco soup recipes are pretty basic. Throw in some ground beef, a bunch of cans of stuff and add two packets of "taco" seasoning. I make two major changes to Angie's Turkey Taco Soup. 
First: I use ground turkey. You will not miss the beef. Seriously. 
Second: I avoid the super salty traditional season packets whenever I can. There's a reason your shoes don't fit and rings won't come off your fingers after using the typical taco seasoning packet. 
My recipe replaces the seasoning packet with Green Onion Salsa to get a zippy, citrus tang that makes Angie's Turkey Taco Soup taste fantástico!  
Ingredients


  • 20 oz ground turkey, 7% fat 
  • 1 can diced tomatoes*
  • 1 can tomato sauce
  • 1 can black beans
  • 1 can kidney beans
  • 1 can sweet corn
  • 1 can water (just fill up your empty corn can and dump it in)
Green Onion Salsa Ingredients

  • 1 large bunch of green onions including greens, cut into 1 inch pieces
  • 2 garlic cloves, peeled
  • 1/2 cup lightly packed fresh cilantro leaves
  • 1/4 cup wine vinegar (white or red)
  • 1/4 cup lime juice
  • 1/2 teaspoon salt, or to taste 
  • 1-2 jalapeños, (optional)
  • Topping suggestions: tortilla chips, sour cream, hot sauce and shredded Mexican blend cheese

* My kiddos aren’t nuts about chunky tomatoes, so I add them into the food processor along with the salsa ingredients before adding to the soup.
Directions
Step 1: Brown the ground turkey in a large skillet over medium heat. Drain off the fat and place meat in a crockpot.
Step 2: Add the undrained beans, corn, tomatoes, tomato sauce and can of water.
Step 3: Place all Green Onion Salsa ingredients into a food processor and purée. Add salsa to the crockpot. Give everything a stir.
Step 4: Turn crockpot on low for 6 to 8 hours.

To serve, place soup in bowls and then top with your choice of crunched tortilla chips, sour cream, Mexican blended cheese, or hot sauce.

(Not So) Wordless Wednesday #45: Frozen Craze

I'm sure you all are aware of the Frozen craze going on all around us! Of course, being the Disney fanatic that I am, I pre-ordered the bluray that will be released on March 18th, but then the digital copy was released last week and of course we couldn't wait a couple weeks... so we had to get that. And that's after already having gone to the movies to see it two times. Anyone else guilty of this insanity?

If you have seen it, you have to admit that it is really good. I mean, really good. If you haven't seen it, what rock have you been living under?? The digital copy is available for download, so come back in a couple hours and let me know what you thought, haha!!

Anyway, the other day I saw this Super-Size Plush Olaf at JCPenney. Of course I had to stop and give him a hug! This adorable guy will only run you $500.... wow, if you bought this, you have to comment and tell me! He's cute, but not happening here. I have no idea where I'd even put something this big!
