Super Easy Fondue for Super Bowl Sunday


Are you ready for some football? Appetizers? 
I have to admit that I'm just as excited about the Super Bowl food and the commercials as I am about watching the game. 
Easy, cheesy, Parmesan Fondue is a crowd-pleasing game winner at any gathering. My 11-year-old is obsessed with it. He insists that Parmesan Fondue has a place at every special occasion. And, I never disagree.
This recipe serves a crowd of fondue lovers. You’ll want 2-3 thinly sliced sourdough baguettes to handle all of the gooey goodness. My family can’t always wait for a crowd or an excuse, so I have been known to halve the recipe and make a family batch. No need to keep it warm in a fondue pot, because we eat it sooo fast.

Ingredients
  • 1 1/2 cups milk (nonfat works just fine)
  • 2 (8 ounce) packages cream cheese, cubed (don't skimp...no reduced fat )
  • 1 1/2 cups grated Parmesan cheese (not powder…but I do use the pre-grated Parmesan)
  • 1/2 teaspoon garlic salt (or 1/8 tsp garlic powder and 3/8 tsp salt)
  • 2-3 sourdough baguettes, thinly sliced
Instructions
1. Whisk together milk and cream cheese in a medium saucepan or electric fondue pot on low heat.
2. When cream cheese is melted, add Parmesan cheese and garlic salt.  Stir occasionally until Parmesan is melted and mixed into the fondue.
3. If using a sauce pan, pour warm fondue into a bowl or mini slow-cooker and serve with baguette. If you have a fun fondue pot, turn the heat to its lowest setting and serve right out of the pot.

Beware of Banana Spiders!!!

I have one completely irrational fear.
 
SPIDERS
 
When I say irrational, I mean seriously, "what the heck is wrong with that girl" irrational. Here's a little quiz to see if you can guess the severity of this fear.
 
 
Which of the following things have I done in the past in response to seeing a spider:
A. Faint.
B. Telephone someone to come kill it.
C. Have an asthma attack.
D. Run and scream in fear.
E. B and D
F. All of the above.
 
 
 
I'm more than a little ashamed to admit that if you guessed all of the above, you are correct. I know that it's ridiculous, and I can't explain it or change it. To be honest, just writing this post is giving me the creeps, but I have to warn you of the dangers lurking in....(dramatic pause)... your produce!!! 
 
A Cautionary Tale...
Yesterday I was going about my business as usual. I often enjoy having a banana as a mid morning snack, but yesterday when I pulled my banana from the bunch there was a little surprise for me.


If you look at the  center of the banana, notice the lovely little spider nest. Being that I am deathly terrified of spiders, I instantly panicked and was terrified to go near it. One thing that freaked me out a little more, is that bananas are not grown here in the US, they are grown in countries of the tropics.
 
I googled, "spider nest on bananas", and what I found terrified me even more!
 
There were many news articles about one story in particular. Consi Taylor, a woman in the UK who discovered a spider nest on her bananas. Unlucky for her, the spiders began hatching right before her eyes. It gets so much worse... It turns out that the spiders were Brazilian wondering spiders, which according to the Guinness Book of World Records is the deadliest spider. They are commonly known as banana spiders because they hide in banana plants, and occasionally show up in banana shipments. Click here to read more about Consi Taylor's story
 
Before I even finished reading the news articles, I grabbed a garbage bag, turned it inside out and used it as a glove to grab the bananas, flipped it right side out, tied it in a double knot, and threw it out the front door. Worried that they could be the banana spiders just waiting to hatch, I called pest control thinking I'd sound like a crazy person. After hearing my problem, the woman put me on hold for a while. When she finally returned she said, "Oh, we better pick that up and send it to the lab!" Oh yeah, that made me feel much better.
 
I have no idea what they will find out at "the lab". Maybe it was just a spider at the store after the shipment arrived? Or maybe, that nest did travel from the tropics just to scare the bejeebers out of me! I have to laugh at myself a little. What are the odds that I, being irrationally afraid of spiders, would find a spider nest on my bananas. All I know is, it's going to be a long time before I'll be able to buy bananas again. If ever...
 
Moral of the story: Thoroughly inspect your bananas for spiders!

Omaha!
Whoa, talking football on the blog? Hey, a girl can love high heels and have lots of love for some Peyton Manning, too!

I am so excited that the Broncos are going to Superbowl XLVIII! Lately, Manning's "Omaha" call has been an obsession in the football world. Did you watch the game on Sunday? No, I did not count how many times he used it! My aunt is suggesting a Superbowl Party drinking game revolving around "Omaha", but I'm not sure I'd last very long!

I found this video on facebook and I laughed so hard!

Secret to stress free mornings with the kid...

Mornings can be a stressful time in a house with school aged children. The Princess is NOT a morning person. That cat meme... well that was her every morning. I would have to go in her room and repeatedly try to wake her up. When she would finally wake up, she'd be so grouchy that even the slightest thing could cause a full blown meltdown. She'd move unbelievably slow and would run late almost every day.  
It was stressful and so frustrating. 

I tried to think of anything that could help make our morning run more smoothly. With a little research and experience I've found that the following things make a huge difference:

Sleep
Make sure your child is getting enough sleep! I have always been a stickler about this one. If you aren't sure how much sleep your child needs, you can read about it here. Remember, all children are different. So your child may need more or less than what is suggested.

Extra 15 minutes
This is one that we've added in. Mornings are stressful enough, but add in an unexpected problem and everyone is late. If you have an extra 15 minutes planned into your morning routine you can avoid the stress and tardiness.

Night Before Prep
Have things ready the night before. If your child picks out his/her clothing the night before, and makes sure everything is in place for the next day it can save so much time. 

Routine
Have a morning routine. If it helps, make a chart. Teaching your child to have a morning routine will create good habits that will stick with them forever.

While these things have helped a lot, The Princess was still very grouchy and unmotivated... Until I discovered one thing that put us both into a great mood!

The big secret...

One morning instead of telling her it was time to wake up, I said, "come snuggle with me for a while." I went to my room and laid down. Seconds later, there she was. (Oh, so you can hear me the first time...)

We snuggled and talked and giggled. It put us both into a great mood for the rest of the morning. Since then, it's become part of our morning routine. Occasionally she'll still wake up a little cranky, but overall our mornings have gone from stressful battles to fun and very smooth. 
 
So that's our secret, morning snuggles! I know that snuggling won't work for everyone. I'm sure many of you are reading this thinking, yeah right! So maybe you don't have to snuggle, but if you're looking for a secret to a stress free morning maybe you can try to add something to your morning routine that will cheer everyone up! Raspberry Jam Muffins with White Chocolate Chips

The happy, snappy Jamberry poem runs through my head EVERY time I make my Raspberry Jam Muffins with White Chocolate. 
I love these muffins. Let me list a few reasons why:
1. White chocolate chips
2. Super easy to make
3. Kids LOVE them so much they actually say "thank you" when I make them
4. White chocolate chips
Raspberry Jam Muffins with White Chocolate are actually inspired by a Cooking Light recipe I found ages ago. I sabotaged the recipe a bit with the handful of white chocolate chips, but I am very choosey about the jam I use. I choose organic, low-sugar, high-quality, lumpy-bumpy-fruit-filled jam.  And, feel free to mix it up on the flavor of your jam berries. Raspberry, strawberry, blackberry, etc. I've even used my homemade blueberry and raspberry-currant freezer jams.

Ingredients
  • Standard muffin pan with 12 paper liners
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 2 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large egg
  • 2/3 cup vanilla fat-free Greek yogurt
  • 1/4 cup melted butter
  • 1/4 cup non-fat milk
  • 1/3 cup jam
  • 1/2 cup white chocolate chips
Instructions
Step 1: Preheat oven to 375°F (350°F convection)
Step 2: Insert 12 paper lines into a muffin pan.
Step 3: Combine flour through salt in a mixing bowl.
Step 4: Create a well in the middle of the dry ingredients. Whisk in the egg then add in yogurt, melted butter and milk.
Step 5: Stir the wet and dry ingredients together just until moist.  The batter will be very thick.
Step 6: Gently fold in jam and white chocolate chips. It should look like a jam ribbon weaving in and out rather than purple/pink colored batter.
Step 7: Spoon batter into muffin cups. Each will be about 2/3 full.
Step 8: Bake for 15-17 minutes until muffins are golden brown and spring up when lightly pressed with your finger.
Step 9: Use a butter knife to pop muffins out of the pan and allow to cool on a wire rack for 10 minutes. Remove from wrappers and enjoy!

New Look!

It has been so crazy getting things changed over! I absolutely love my new blog name, and I knew I was going to have to give the blog a whole new look.
 
After many hours of working on it, here it is!

The red kiss is so me, and I finally feel like my blog is really a reflection of myself. I have to say that I am very proud of myself for doing it all on my own rather than hiring someone. Yay me!

(Not So) Wordless Wednesday #38- 23rd Annual Champagne Ball

Welcome back to the (Not So) Wordless Wednesday Blog Hop!

You probably notice that things have changed a bit over here. I have changed my blog from That Suburban Momma to Darling Dame. I am still in the process of changing things over. Sorry if this causes any confusion!


23rd Annual Champagne Ball

We had such a fun New Year's Eve. We went to the 23rd annual Champagne Ball in Portland. I've never been to a New Year's Eve party, and this year since The Princess was with her dad we wanted to do something fun. We looked around and this seemed to be the party to be at. If you are in Portland, I definitely recommend that you attend a future Champagne Ball because it was so much fun!



The party was huge! It was at the Hilton Executive Tower in the Grand Ballroom and also on the 23rd floor in the Sky Lounge.  The music was fabulous! There were two great NW bands playing, Radical Revolution & The Gentlemen's Club Band. When the bands weren't playing there were many djs to take over who also played music in the smaller rooms. 

At midnight there was a huge balloon drop and tons of confetti! It was so magical and was such an awesome way to ring into 2014!
