Meatballs in Red Wine Barbecue Sauce


Mmmm.
My son l-o-v-eees Meatballs in Red Wine Barbecue Sauce. These lovely, flavor-coma inducing meatballs are by far his most requested dinner. Unless, of course, I was willing to just make him bacon for dinner. And, I'm not willing to do that. Well, maybe for his birthday.
My son refers to these magnificent morsels as "barbecue meatballs." That just doesn't cut it for me. That sounds like I'm using the bottled, sugar-filled sticky sauce. No corn-syrup laden sauce is coming out of my kitchen! Meatballs and Red Wine Barbecue Sauce are way too "mature" for that.  
Seriously though, this sauce is complex and tangy and fantastic. Completely worth the extra 10 minutes to prepare.

Ingredients List for Red Wine Barbecue Sauce
  • 2 cups ketchup (look for corn-syrup free varieties)
  • 1/2 cup red wine
  • 1/4 cup red wine vinegar
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp chili powder
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper
Instructions
Step 1:  Combine all ingredients in a small sauce pan and simmer over medium heat for 10 minutes, stirring occasionally. 
Step 2: Remove from heat and allow sauce to cool while you prepare the meatballs.
Ingredients List for Meatballs
  • 2 lbs lean ground beef
  • 1 1/4 cups rolled oats
  • 1 small onion, minced
  • 1/2 tsp garlic powder
  • 2/3 cup, low-fat or non-fat milk
  • 1 egg
Instructions
Step 1: Preheat oven to 350ºF.
Step 2: Place all ingredients into a large bowl. Use clean hands to knead/combine mixture thoroughly.
Step 3: Roll and form mixture into 1 1/2 to 2 inch balls and place side by side into a 9×13-inch baking dish.
Step 4: Pour Red Wine Barbecue Sauce evenly over the top of meatballs.
Step 5: Bake meatballs, uncovered, at 350ºF for 1 hour.

Serve warm.

Last week was Spirit week for my preschool. Each day has a different theme, and the kids get to dress up accordingly. It's so fun, and the kids love it! We had pajama day, sport day, TV character day, and Superhero/Princess day. Here is what I threw together to dress up as Supergirl on Superhero day. So fun!

(Not So) Wordless Wednesday Linkup #42

 Snowed In

Last Thursday it started snowing and for the first time in years we had enough snow to play! School was cancelled on Friday, yay! We were snowed in through the weekend, and had another snow day on Monday. 

It was a wonderful weekend of sleeping in, big breakfasts, playing in the snow, sledding, hot chocolate by the fire, and spending time with the family. It was such a nice break from our constantly busy life! Today it's back to reality, but here are some fun photos from our weekend!

Cheese Tortellini Soup



I love it when I find a vegetarian recipe that is YUMMY. 

Easy Tomato Tortellini Soup is fabulous and a favorite "Meatless Monday" dish for my family. 

And, you might have noticed that it's EASY. Oh, and FAST. It's perfect if you are like me and running from music lessons to home to sports practice...and, you don't want to go through the drive through. 

A couple of ingredient tips for making this amazing soup: 

Tip 1: Pasta Prima is the yummiest 4-cheese tortellini. I find it at Safeway with the fresh pasta. 

Tip 2: The cans of Progresso Recipe Starters are usually found in the soup aisle with the broth/stock. If you haven't used the Recipe Starters, then it's time to give them a chance. I pretty much use the fire-roasted tomatoes in anything that calls for canned tomatoes.

Ingredients

  • 2 Cans of Progresso Recipe Starters “Fire Roasted Tomato”
  • 3/4 cup Sun Dried Tomatoes, not oil packed
  • 1 1/2 cups milk (I use non-fat)
  • 1 1/2 cups Vegetable Stock
  • 2 tsp garlic powder
  • 1 Tbsp Italian Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 Tbsp Corn Starch
  • 1/2 cup Chicken Stock or Vegetable Stock
  •  9 Oz Package Of 4-cheese Tortellini
  • 1/2 cup Shredded Parmesan Cheese
Instructions

Step 1: In a large pot (I use a large, deep-sided skillet) stir together Progresso Recipe Starters, sun-dried tomatoes, milk, 1 1/2 cups vegetable stock, garlic, Italian seasoning, salt, pepper and red pepper flakes.

Step 2: Over medium-heat, bring soup to a simmer.

Step 3: In a small bowl, whisk together corn starch with remaining 1/2 cup stock.  Pour into soup and return to simmer.

Step 4: Drop tortellini into the soup and cook for 9-10 minutes. 

Step 5: After tortellini are cooked, allow the soup to cool for five minutes. It will thicken a little as it sits.

Step 6: Serve warm in bowls with a sprinkle of shredded Parmesan cheese.
